Our winemaking philosophy is the living legacy of our relationship with Giacomo Tachis. Today that vision continues under the supervision of Giorgio Marone, Tachis’s pupil and colleague, in constant dialogue with the growers and the land.
In Sulcis, the harvest is still a human act: slow, attentive.
Every parcel is monitored several times, a sample of every vineyard is tasted before being picked. There are no fixed calendars: the vine suggests the right moment, the fruit sets the rhythm.
The grapes arrive at the winery freshly harvested, intact, selected.
It is here that the silent work of sorting begins: visual assessment, manual sampling and evaluation of the musts.
Every decision, from the destination of each lot to the vinification approach, is born from the union of technical skill and sensory judgement.
Cantina Santadi combines traditional know-how with precise technology. All our wines ferment in stainless steel at controlled temperatures, to preserve the integrity of the fruit and accompany its evolution without pushing it.
Every must is then tasted and followed day after day. It is by listening directly to the wine that the moment for intervention is chosen, with pump-overs and délestage calibrated in respect of its natural rhythm.
Malolactic fermentation takes place in concrete vats, historic guardians of the wines’ balance.
The most important reds mature in oak barriques, where time is an ally: no haste, no compromise.
The process is rigorous, but never industrial. Every step is followed with care, every wine has its own dedicated path, every decision is shared by the in-house winemaking team.
Tachis left us a new way of looking at Sulcis.
He recognised greatness in Carignano where others did not see it; he understood the strength of ungrafted vines; he imagined wines able to speak of an authentic, deep, mineral and Mediterranean Sardinia.
